Caramel Popcorn

We eat this for dinner all the time! Enjoy.


1 cup corn syrup
2 cups brown sugar
1 cube butter
1 can sweet & condensed milk
1/2 bag marshmallows

*tons of popped popcorn (seriously like two big bowls)

melt in sauce pan on medium low stirring occasionally until marshmallows melt.

THanks, Lori. We'll have this for dinner tonight maybe. I think this should be an anything food blog, not just dinner!

I like taking hawaiian haystacks for dinners b/c they cover a pretty broad range of eaters. Little kids can just do rice, chicken sauce, and cheese, if that's all they want, plus most kids like pineapple and mandarin oranges, while adults like the variety of toppings.

Summertime Veggie Pizza

2 Pillsbury Butter Tastin' Cresant Rolls
2 c. sour cream
2 c. Hellmans Real Mayo (not Miracle Whip!)
4 tsp. dill weed
2 tsp. Accent Salt
2 tsp. Minced Onion
2 tsp. Beau Monde (by Island Spice)
2 c. Shredded Cheddar Cheese
2 shredded carrots (or about 1/2 the package of pre shredded carrots)
1 red onion-chopped
1 red pepper-chopped
1 green pepper-chopped
1 head broccoli-cut into small pieces

Preheat oven as instructed on Pillsbur Cresant Roll package.

On a large cookie sheet, roll out Cresant Rolls to look like a pizza crust. Piece together the Cresant roll pieces until it covers the entire sheet. Pinch edges together. Bake approx 8-10 minutes or until golden brown. Cool completly.

Veggie Dip Mix:
Mix mayo, sour cream, dill weed, accent salt, Beau Monde and minced onion. Mix together. If you want to use this as a veggie dip, chill for 2 hours before serving.

Spread a generous amount onto the Cresant Rolls. There may be about 1/4 of the veggie dip left. Top with cheese, carrots, peppers, onions and broccoli. You can sub any veggie. Chill for 1 hour. Cut into slices and enjoy! :)


p.s. make sure the cheese is the first item you put down. It has to stick to the veggie dip.

Thanks for the recipe Lori, but sometimes I need to taste recipes a few times before I make them so could you make this for playgroup again... and again... and maybe again?
